Hi Richard,
You should be OK. I ran Linux off an external USB HDD for 12 months at
one point (long story). The only element of risk is the USB device
being supported. The USB mass storage devices are quite well supported
under most modern flavours of Linux so I'd give it a shot - if it didn't
work then return for a different maker.
Check google too - if there are specific incompatibilities you'll find
them.
