The best one is the one you can figure out...

Amarok works.  Make sure you follow some tutorials though, it's easy
to get lost!

There is also gtkpod. Personally, I don't have an iPod so I just use
the command line since that is by far the easiest way for me to manage
the music on my MP3 player (SanDisk Sansa.)
