I don't use Gnome, but have had been able to Bluetooth between my laptop
(with USB dongle) and phone.
The first thing to check is whether the Bluetooth chipset is supported
(some are not). It is most likely on an internal USB or PCI connection,
'lsusb' or 'lspci' should shown it up.
If it's there and recognised you could try 'hcitool dev' to list all
Bluetooth dev's (ie. local BT interfaces) and 'hcitool scan' to scan for
remote devices (ie. your phone).
In order to actually make a connection you will have to pair your phone
with your laptop. Normally you will set the PIN for the laptop in
/etc/bluetooth/pin and initiate the pairing from the phone.
Best to see if you can get that far before asking/guessing what you are
trying to achieve (dial-up networking, audio links, transfering files,
etc).
