Click the notification icon (bottom right corner - usually a number
indicating how many notifications there are...). This brings up the
list of running "jobs" like file transfers.
On a running job, click the X cancel a job. If you have multiple jobs
happening, they may be grouped (3 or 4 simultaneous file transfers for
instance) - there is an arrow icon (I think) to expand/collapse the group.
My details may be a little off - I don't have any processes running like
that at the moment so can't be more specific. But, you should get the idea.
In terms of stopping an application (another type of "job"), hit
CTRL-ESC to bring up the system activity panel - you can kill apps there...
